We tried a great new recipe last nite for stuffed jalapenos. It was from Cooking Light magazine and was easy to make. Combine 8 ounces soft cream cheese with 4 slices crumbled bacon, 1/2 cup sharp cheddar cheese, 1/4 cup minced green onion, 1 teaspoon lime juice, 1/4 teaspoon kosher salt, 1 tablespoon minced garlic and 1/2 ounce sun dried tomatoes. Take 12 jalapenos cut and seeded in half and stuff with stuffing. Spray grill well with cooking spray and grill over a medium to high heat for 8-10 minutes. Top with diced tomatoes, cilantro and enjoy!
